Here are three healthy, hearty, and plant-based easy vegan dinner recipes that are perfect for easy lunch or dinner.

RECIPES:

—– ROASTED BELL PEPPER SPINACH PASTA —–
SERVE : 2

INGREDIENTS

Whole wheat fettuccine Pasta : 4 oz

FOR CREAMY PASTA SAUCE:
Bell Peppers: 2 Medium
Spinach Leaves : 1/2 cup
Chickpeas : 1/2 cup
Green Chilies : 2
Oil: 1/2 Tsp
Garlic : 1 Tsp
Salt: 1 Tsp
Crushed Red chili flakes: 1/2 Tsp
Coriander Powder : 1/2 Tsp
Oregano: 1/4 Tsp

FOR GARNISH:
Cherry tomatoes : 1/2 cup
Olives: 1/4 cup

Slice Bell Pepper and toss in pinch of salt.Heat oven to 350 degrees F and roast red peppers on a baking tray about 15 – 20 minutes.
Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender (7-10) minutes. Drain the pasta in a colander.
Transfer roasted peppers, spinach leaves , chick peas (Drained and washed) and green chilies.
Blend until creamy and smooth.
Once blended, set aside and heat a pan over medium heat and fry crushed garlic for a minute.
Now add blended sauce to pan and cook for about 3 to 4 minutes.
Add seasoning , salt, chili flakes, ground coriander powder and oregano. Taste and adjust seasonings as needed, adding more salt and pepper or nutritional yeast for flavor.Flavor should be very strong since the noodles don’t have much flavor – so be generous with your seasonings.
Now add some water as it will get thick and will stick to pan. Once it reaches a simmer, reduce heat to low and continue simmering.
Once sauce is thickened to desired consistency add Pasta. Toss and cook for a minute or two .
Garnish with cherry Tomatoes and Pitted Black Olives.

—– MUSHROOM SPINACH WRAP —–
For this wrap I am making whole wheat roti wrap. But you can use any store bought. If you want to learn its recipe do let me know in your comments below and I will make a video on it:)

SERVE : 1

INGREDIENTS
Whole wheat wrap ( or any other you like) : 1

Oil: 1 Tsp
Onion chopped: 2 Tbl
Button Mushrooms : 4/5 pcs
Salt : To Taste
Black Pepper: To Taste

Baby Spinach
Sliced Tomatoes
Jalapeno

For Sauce:
Vegan Mayo : 2 Tsp
Crushed Garlic: 1/2 Tsp
Chili Flakes : 1/4 Tsp
Dried Rosemary 1/4 Tsp

Chop Onions and Slice Mushrooms.
Heat Oil in a frying pan on medium heat and saute onions and Mushrooms, until they change color.
Add Salt and Black pepper.
Remove from heat and let them cool for a minute or two.
Make sauce by mixing all ingredients.
Spread baby spinach leaves, mushrooms mixture, sliced tomatoes , jalapenos and sauce over wheat tortilla and wrap it all up.
Here you go with a creamy crunchy yummy lunch wrap which is also loved by meat lovers.

—– TADKA VEGETABLE OATS STEW —–

Serve: 2

Oil: 1/2 Tsp
Onion: 1/2 Medium
Minced Garlic: 1 Tsp
Chopped Carrots: 1/4 cup
Broccoli: 1 cup
Green beans: 1/4 cup
Sweet corn : 1/4 cup
Peas: 1/4 cup
Water: 3 cups
Orange lentils soaked : 2 Tbl
Salt: 1 Tsp
Red Chili Powder: 1/4 Tsp
Turmeric Powder: 1/4 Tsp
Cumin Powder: 1/4 Tsp
Garam Masala: 1/4 Tsp
Black Cardamom : 1 Pcs
Oats: 2 Tbl

For Tadka
Oil: 1 Tsp
Fenugreek seeds : 1/4 Tsp
Coriander Seeds: 1/4 Tsp
Dried Red Chili : 3-4 Pcs
Dried Rosemary : A Pinch

Soak lentils for 3 to 4 hours.
Prepare Vegetable.
Heat oil in a pan and saute onions. Add minced garlic and fry on medium heat, don’t burn your pan like me 🙂
Add carrots, broccoli,green beans,sweet corn,and peas. You can add or skip vegetables according to your choice.
Fry for a minute or two and then add for about 3 cups of water or in which your vegetable get soaked.
Now add soaked lentil season them with salt, chili powder, turmeric powder, cumin powder, Garam Masala and black cardamom, and bring them to boil.
cook them for 3 to 4 minutes , now add oats and cook for another 2 minutes.
Remove from heat.
For Tadka heat oil in a small frying pan and shallow fry fenugreek seeds, coriander seeds dried red chili and dried Rosemary.
Dish out the stew and pour tadrka oil on it.
Serve hot with garlic bread and Enjoy:)
