Here’s how to make Lauki Dal Coconut Curry!!

Ingredients:
1/2 medium sized long melon, chopped
150g red lentil (Dal), soaked
1/2 medium sized tomato, chopped
2-3 green chillies, halved
1/2 tsp turmeric powder
1/2 tsp chilli powder
200g grated or sliced coconut
3 shallots
1 tbsp mustard seeds
1½-2 tbsp coconut oil
Curry leaves

Recipe:
Cook the chopped long melon with dal, tomato, chillies, turmeric powder, chilli powder, salt until creamy. Blend together the coconut and shallots with 120ml water into a cream. Pour the coconut into the cooked long melon and dal mixture and stir until combined. Add 100ml water to make it less thick and and let it simmer for 4-5 minutes on low-flame. Heat oil in a pan and add the mustard seeds and let it splutter. Add the curry leaves and add it into the curry. Serve with rice or chapati.
