Don’t mind telling you I just dropped my husband off at work he asked to go go to leic today and so I am on my way to the HB I need to go get groceries for the week and I’m going to do a little bit of food prep today
Not a lot I’m going to do most of it tomorrow cuz it’s my day off and that’s when I’m going to spend most of my time with you but I figured it’s been a while since I’ve done a little grocery haul with you guys I’m going to warn you
Right now my house is kind of a disaster as it’s tradition so that’s a thing but I’m going to do my best to try and make it somewhat presentable the only reason I’m not doing all of my food prep today is because Nikki is coming
Over for me to do her nails so I don’t really have time to do all the food prep before she gets here and I don’t know how long it’s going to take and I also need to do my nails but I’m doing different something different I chopped
Off the the they were getting way too long I was ready for them to be short again I need to try and do as much of my nails as I can today but I’m switching on myself from a acrylic to Builder gel because the acrylic on myself is just
Taking way too long and I losing patience I know that I will get better with it if I stick with it and I’ll get faster but I’m just not I’m not at that place right now and I’ve been watching videos of people doing builder in a bottle and it just looks so
Easy if you’ve been around for some of my nail Journey you know I see things all the time that I’m like oh that looks so easy I can totally do that and then I try it and it’s not easy at all but I’m going to try uh I do have my cosmetology
License but I specialized in hair color when I was doing hair even though I know how to do nails it was never something that I did a lot excuse me even though it was not something I ever did a lot like for other people like getting paid for
And I do an okay job on myself but I also take five ever to do it cuz I’m right hand dominant so when I have to use my left hand it just takes a real long time and even using my right hand on myself like the angle’s not

Because I’m a foodie I love different kinds of food I want to be able to have a lot of variety in my diet and her recipes kind of take the guesswork out I don’t think I’ve ever had a recipe of hers that I didn’t absolutely love
Except for ones that I kind of screwed up because I wasn’t making them correctly but her recipes are that being said very easy to follow simple ingredients not a lot of like special ingredients that you have to buy cuz I’m not a fan of that either cuz stuff is

Cuz I was running out and I needed it for some recipes but you know restock and then also these law band Dorito carb counter tortillas are by far the best low carb tortilla I found this is a new size it’s the snack size so it’s like between their street Taco size
So this is the street Taco size which you can see is a little bit smaller and these ones are only 30 calories per tortilla these ones are 40 calories per tortilla but they are quite a bit bigger and I thought they would be good for my breakfast tacos this week I needed some
More peanut butter I love these on salads and I’m going to be doing a lasagna Skillet um with a side salad and I’m going to be putting this on my salad and I needed some tomatoes for my salad I’m also going to be making a macro friendly food chicken Pad Thai recipe
This week that I needed roasted peanuts for some limes I these were not on the grocery list but they are my absolute favorite Apple come on Focus right here come on friend okay well it’s not going to focus anyway these are cosmic crisp apples I like them better than honey crisps and

One of the things I was supposed to prep yesterday was the sauce for this morning’s breakfast this morning breakfast is kind of inspired by that Viral feta egg Trend business not usually a viral recipe kind of gal but this one looked really good to me obviously I’m going to put my own spin
On it the recipe that I was inspired by I found on Instagram cuz I don’t do Tik Tok basically it was just like a tortilla and she smashed some avocado on it and she cooked in a pan some feta with some fried eggs and a runny yolk
Which you know that’s my jam and then she put hot honey on top of it I ran that recipe through my calorie tracker I used macros first and it didn’t have enough protein for me but it was very high calorie because of the amount of
Avocado so what I’m going to do is I’m going to put my own spin on it by making my own sauce to put on it instead of just straight up avocado I’m going to do an avocado spicy honey creamy situation and I had originally planned on using
Greek yogurt because I do like Greek yogurt in like plain Greek yogurt in Savory applications not as big of a fan in sweet applications and I know this is kind of a Savory sweet cross over but I was like why would I use Greek yogurt when I have my best friend cottage
Cheese for another recipe that I’m going to be making tonight and I won’t need all of it so I figured since we’re going to have cheese already in the tacos in the form of feta that this could only make it better fetta cuz feta look it’s early if you came here

Have my avocado hot honey dressing except for I’m using cottage cheese and stuffff HB low fat low that cottage cheese here we go half a cup 90 calories at it good so we made that into six servings five okay so that’s 96 calories per serving for this dressing I don’t necessarily know that
I’m going to need a whole half cup of cottage cheese that sounds like a lot but we’ll see we’ll see when I get it in there we’ll start with 1/4 cup and then we’ll go from there after all that I forgot to check oh I did a/4 cup

I hope you’re refrigerating your eggs if you’re buying refrigerated eggs cuz that’s important so a little trick I put too much water in this you can take your eggs out of the fridge and put them in some hot water and let them just soak in there for a little while and it’ll bring
Your eggs to room temperature Tada um but it’ll make them cook a little bit more evenly so that you’re not in a situation where you’re having to overcook your yolks to get your whites cooked I’m going to make this sauce I’m going to make this sauce and I’m going to weigh everything

Don’t have honey so and then some garlic powder which we always measure with our heart and I don’t know if it’s going to need salt yet because cottage cheese is quite salty if you don’t have an immersion blender they’re not necessary but they Mak little projects like this
Really nice cuz I don’t have to take out my food processor or my big ass blender and the only thing I have to clean is this it’s nice and blend it up I want it to be really thick so that it’ll stay on the torella see if I can
Show you the texture of that she thick with three se’s and I think it’s fine with just the 1/4 cup of cottage cheese I don’t think it needs more but I do think it needs some salt though okay we’re going to call it Mindy’s OCD is going crazy but you know
Whatever fingers really are the best tools anyway just more salt or some salt wasn’t sure if it would need me quite a bit of sodium in hot cheese so I didn’t want to add salt in the beginning and then have it be way too salty yeah I think that’s going to be
Tasty it could also use more spice so I think I’m going to add a little more Cayenne before I start seasoning this I’m going to get my eggs going first I’m going to start by using some non-stick spray real quick and we’re going to do 1/4 cup of feta
Which is 28 G sprinkle it in the pan here some big pieces and some of the powdery stuff and it’s all already starting to sizzle a little and this is reduced fat feta you can definitely go full fat there’s really not that big of a difference in the calorie count and

A long time I’m sorry this is repetition we always start with sanitizing the injection area I do my arms because honestly it’s the least painful and that’s when I lost the most weight but mostly it’s said it’s the least painful and it’s the easiest to film I don’t
Know that I necessarily believe that there’s a correlation between how much weight you lose and where you inject I think there’s been enough anecdotal evidence that it can have an effect on your side effects for sure for example I used to have allergic reactions to the preservatives when I injected in my legs
My legs were also by far the most painful place to inject do with that what you will so I I do not inject on my legs anymore I’ve also injected on my stomach I’ve heard people say that you get worse side effects when you inject in your stomach that wasn’t really my
Experience but you know I haven’t really had a hard time with side effects in general so the wovi pen is quite a bit different than the moonaro pen it does not have a lock on it yeah it doesn’t have a lock on it uh so it has a cap just like the mojarro
Pen does but the needle is like down in there with the mojarro pen the second click is the needle coming out of your skin so you’re immediately done with the wovie pen there’s two clicks but you need to hold it in place until the little yellow window in here stops
Moving as you start injecting you’ll notice there’s a little yellow plunger that’s coming down you need to keep it in place until that stops moving the instructions used to say that you needed to count to 10 but now they just say you can stop once the little yellow plunger

Frustrating experience with a customer and the last thing I wanted to be doing was to cook dinner but thankfully I had given myself a head start with that sauce the day before so I had fewer excuses is unfortunately I feel like my frustration for the day really came out
In the dinner preparation if you’ve ever had pad Tha or tried to make Pad Thai or any rice noodle dish and the noodles were gummy and gross it’s probably because you boiled them boiling activates the starch and it makes them really gluey so you’re supposed to soak
Them in room temperature water for about 15 to 20 minutes until the noodles wrap easily Around Your Finger without breaking and I did that but I think I made the the water too warm and so they got you’ll see other than the noodle debacle these came together really easy
Just a little bit of oil in the pan add in some diced chicken add some salt and pepper you’re just going to let that brown in the pan until it gets some good color in it and stir it around and then you’re going to remove the chicken from
The pan and add in what’s supposed to be sliced onion but raise your hand if your husband hates vegetables and you have to hide them so I did diced onion instead you’re going to add a little bit more oil to the pan add the onion till it’s caramelized if you’ve never beat eggs
With chopsticks it gives a texture that’s really hard to describe but you’re going to finish that and then add in a quote unquote tablespoon of garlic that was probably more like a/4 cup but you know what you measure garlic with your heart add the eggs to the pan
Scramble them up until they’re almost set and then you’re going to remove this from the pan as well so that it doesn’t overcook add it to the chicken and then we’re going to pour in the sauce we made yesterday and I added more water because enter the gloopy noodles I was trying to
Pull these apart they were all stuck together it was a mess I added the water because I was hoping that maybe if I boiled them a little bit that they would come apart and cook a little bit better it sort of helped but not really you’re going to add the chicken and the
Rest of the stir fry ingredients in mix it around top it with some chopped peanuts and then I served it with some chopped cilantro and green onion on top and yeah that was It well I’m not at all happy about the noodle situation but we’re going to give it a shot and see how bad I screwed it up I’ve literally never had rice noodles do that to me before but W the noodles are try there hard and gross but that’s my fault or the noodle
Fault the sauce itself is delicious it is a much smaller portion than what hers normally are so if you’re somebody that struggles to eat her portion sizes sometimes cuz they are quite generous usually then this might be a good one for you to try delicious flavor make sure you cook the noodles

Need to lose about 200 lb if I were to remain in a caloric deficit that entire time in all likelihood I would start to experience stalls I would also experience um metabolic adaptation or the slowing down of my metabolism in order to try and reach homeostasis and so I started inserting

And I just I hate them they they tend to lean more towards like cardio and like hit almost and that’s just not what I’m looking for like I’m just trying to get my steps in I don’t cardio is not necessary for weight loss in fact there’s been plenty of studies that have
Shown it can actually be counterproductive to weight loss um it’s great for your cardiovascular health but I’m not really concerned about that at at this point the last goal that I had for this maintenance period was to successfully maintain my weight loss from my last cut the last maintenance
Period that I did before this cuz I think I’ve really only done one no I’ve done two yeah this was my second one so I did one other one before this I did not do a great job of maintaining my weight loss I probably went a little too
Far on the calories I ate out a few too many times and I was just like yeah whatever it’ll come back off when I go back on my cut this time I wanted to be really mindful of not just using it as an excuse to just do whatever I want
Because the whole point of this maintenance is to teach myself how to maintain my weight loss so that when the time comes and I decide to transition off of week oie I already have the tools that I need in order to maintain that weight loss I’m really excited to report
As far as my weight goes I did a very very good job of maintaining my weight this time super proud of myself because that was a big thing for me and really really it was the most important thing for me in this maintenance cycle to show
Myself or to prove to myself that I could maintain my weight to give you guys some numbers I ended my last cut with a low weight of 249.50 lb finally made it under the 250 mark my average weight for that week was 22.2 my low throughout maintenance and obviously I’m eating more carbohydrates
So I’m not going to be as low as my lowest weight and I’m eating more calories um but my low for maintenance was 21.2 which was less than a 2 lb difference I wanted to stay within a 5 lb difference even better than that my average for this week was 252 so my
Weekly average for my last week of Maintenance was actually 2 lbs lower than my weekly average for the last week of my cut obviously I wasn’t aiming to lose any weight I wanted to stay the same and I feel like I definitely succeeded in doing that I’m super super
Super proud of that progress it would have been even better if I had hit the other goals with getting the exercise and everything but I’m not going to beat myself up over that because the reality is is that I was able to maintain because of the lack of activity if I had
Been doing the kind of activity that I had hoped to do I’m pretty sure I would have lost weight so I think overall I’m just happy with the progress that I made in regards to the maintenance I am super excited to start my next cut next week
I’m going to be aiming for 12 weeks if I’m feeling great at the end of that 12 weeks and I want to keep going then I may extend it to 16 but the goal for now is to just do 12 weeks my hope is to
Lose between 10 and 20 lb I would really love to be closer to that 20 lb mark because I shared with you guys last year one of my goals this year is to get under 200 lb which means losing about 50 lbs this year so I know it’s ambitious
And honestly the number on the scale is just that it’s just a number but it is a way to track my progress and if I don’t make that 10 to 20 lb goal I’m not going to beat myself up I’m just going to do what I can to stay on track with that
