Let’s make a delicious baked fish in the oven. It’s easy and on your table in less than 30 minutes. I am using tilapia filet but you can substitute it with a filet of your choosing. It is perfect for a weeknight meal or for meal prep. Can be served with rice or vegetables and can be keto friendly.
Ingredients:
6 (depending on size) tilapia filet or filet of your choice
1 lemon for garnish
12 oz cherry tomatoes
Fish rub:
2 tbsp olive oil
4 crushed garlic cloves
1 tbsp Cajun seasoning (if you don’t like spice see sub below)
Juice of 1 lemon
Cajun seasoning substitute:
1 tsp smoked paprika
1/2 tsp dried oregano
1/2 tsp dried thyme
1 tsp onion powder
1/4 tsp salt or salt to taste
1/4 tsp pepper

Today we’re making a delicious baked fish in the oven. I’m using tilapia fillet, but you can use any fish fillet that you prefer. It’s quick and easy, perfect for the weeknights. And I give you some substitutions if you don’t like spice because I topped mine with a little Cajun seasoning.

So I’m going to put them to use. I’m using tilapia fillet, but you can use any fillet that you prefer. For my rub, I’m using Cajun seasoning, which already has a bunch of spices and salt in it. I’m adding in some crushed garlic and a really good extra virgin olive oil
And the juice of one whole lemon. You can taste for salt and adjust, but I find that Cajun seasoning tends to have enough salt. So I didn’t have to adjust mine at all. If you don’t like spice, I also included an alternative non-spicy rub in the description area. One of the many things
I love about this recipe is it’s ingredients that you have in your fridge or pantry. So it comes together really quick without you having to go out and buy all these additional ingredients. You’re going to brush your seasoning on both sides of your fillet, making sure to fully cover.
You also want to reserve about a teaspoon to a teaspoon and a half of your seasoning. So we’re going to add that to our tomatoes when we add them to our dish. This is one of the many dishes I use for meal prep because it requires little work
And it stores well for up to four days in the fridge. I normally prep it with a side of broccoli or maybe rice or cauliflower rice, depending on if I’m doing low carb or not. I’m adding in a medley of baby tomatoes, but you can use any tomatoes that you have on hand
And just dice them. I just like the variety of these tomatoes and all the pretty colors and it looks really pretty when plated. Transfer your tomatoes to your baking dish and then use your reserved rub to top your tomatoes. Bake your fillets in a preheated oven at 375 degrees Fahrenheit for 18 to 20 minutes, depending on your oven. And it’s ready. 25 minutes start to finish and you’ve got a delicious fillet with some roasted tomatoes and it made a delicious garlic lemon sauce that you can top your side with.
I’ve used this recipe for fish tacos and it came out great, so that’s another option as well. If you’re plating for guests or your family, I like to add some sliced lemons to a serving plate and then I carefully add in my fillets and my roasted tomatoes. It just looks way more presentable
