Kale Chips & Dip // Healthy Snacks 2024// Jeni Gough

Dip Mixes

Dip
1 cup Greek Yogurt
1/4 cup dip mix (I used green onion)
1 tsp pickled jalapeño brine * optional

Kale chips
1 bunch Kale
2 Tbsp olive or avocado oil
1 tsp flakey sea salt

Air fry on 400 for 5 minutes.

hi friends welcome back to my kitchen
where everything is scratch made in home
preserved I’m Jenny if you’re new here
welcome I’m so glad you’re here today I
am part of a collab called healthy
snacks this collab is put on by Mountain
Grandma I will put her information in
the description box below for you as
well as everybody who is taking part in
the collab you’re going to want to watch
all the videos for the healthy
snacks and Mountain grandma going to
have a giveaway is going to have a
giveaway on June 6th it’s p.m. Central
Standard Time on her channel so leave a

think she may be doing some door prizes
as well so you’re going to want to show
up for that for sure but also just
watching all the hethy snacks I can’t
wait to see what everybody’s
making so pull a chair up to my counter
and let’s get started we are going to
make a healthy chips and
dip okay we’re going to make our dip
first so that it can sit in the
refrigerator and get cooled off so for
our dip we’re going to be
using some plain Greek yogurt because
Greek yogurt has protein
I would go with the
regular Greek yogurt is just so thick
and
dreamy okay so about a
cup and then I have in this jar my green
onion
mix I vacuum sealed it I’ve been trying
to get it open whoa that that was vacuum
sealed tough I’m going to put about a
four of a cup in
here I will link
this video in the description box below
for you on how I made all my dip mixes
and you can use any dip mix you like I
just really like green onion and
basically I took my freeze-dried green
onions put them in the grinder turned
them into
dust so I had green onion powder and
then I put
in uh salt onion powder garlic powder
all the good stuff so it’s all in here
but because I’m me I’m going to take
some of my
jalapeno um broth this is just from
pickled jalapenos
probably a half a teaspoon I like that
Briney flavor in there it won’t give it
a lot of heat it might give it a touch
but it gives it that yummy Touch of
Briny flavor I am going to go ahead and
put it in a container and get it in the
refrigerator to chill so all those
flavors can come together you could also
after you make this throw some fresh
chives or fresh green onions in as well
our favorite dip is green onion
dip I love the Kroger Brand green onion
dip the best they don’t sell it
anymore okay so I’m putting this into
the refrigerator and I have just washed
it so I’m going to dry it really well
but in the meantime I want to remove
this big stem and Rib off of here you
can just pinch it and pull it off
sometimes I find that makes it very
uneven so I just get a cut through
it and just take it right
off get into your
compost okay so if you’ve never had kale
chips before don’t knock it until you
try
it whoa
um Robert hates green vegetables and he
loves kale
chips no you’re not getting kale it’s
not for you
no okay and these little pieces that
kind of
got I’m just going
to put these in a container I’m going to
keep them cuz I’ll put them in my
omelette
tomorrow no you are not getting kale
it’s not for
you sorry bud so any little pieces that
are too small are going in for omelette
tomorrow okay so if you’ve
got just open these up make sure
they’re
dry you can do them whole you can cut
them in chunks
okay so I have to probably do this in
two sections here I’ve got a little bit
of good olive oil if you’ve got a spray
you can use that I don’t tend to
purchase those uh avocado oils and olive
oils in the AOS Sal spray cans they made
me nervous
so I will just paint on a slight
bit and then by flipping them over I’m
ensuring not to have too much olive oil
on
them olive oil being a good healthy
fat not that I am by any means always
cooking healthy cuz I’m very much a
country style cook most of the time with
bakon grease and this and that
but everybody needs a little healthy
snack in their life
right to balance
out I love kale kale is one of those
things
that I found out the hard way by eating
too much of it that my body isn’t
tolerant of raw
veg okay so I’m just going to use some
Portuguese salt it’s like a flaky salt
and I am going to Salt them now while
they are
wet a little flaky salt is good you
don’t have to go overboard and if you’re
worried about sodium and high blood
pressure FYI sodium does not cause high
blood pressure it can make it worse if
you already have high blood
pressure but salt is something you also
need for life so people on low sodium
diets because of blood pressure still
should be very careful those are the
first people to dehydrate and diey in
the summer heat our bodies needs
help I’m using my Zar air fryer Grill
because it’s my favorite but you can use
any air fryer you have or you can just
put them in the
oven 400° for 5 minutes in the air
fryer so I also I want to say when you
have put oil on your chips you can
sprinkle them with any seasoning blend
you like I left mine plain because I’ve
made the dip but if you don’t have a dip
or don’t want to make a dip you can
certainly sprinkle them with taco
seasoning you could do a Greek seasoning
you could do a curry seasoning if you
like anything goes it’s your house your
rules just keep an eye on your chips
they will burn
fast okay first batch done and actually
the um air fryer flipped to 400 and I
couldn’t figure out how to turn it down
no and these are crispy and they start
to turn a little bit Brown cuz they’re
kind of roasted oh my gosh I love
that
um if your dip is a little bit too thick
cuz it can be you can water it down with
a little um milk or water your choice
little bit more um jalapeno brine no no
go away why my dog wants kale chips I
have no
idea but these things are so
good in a way they when they get brown
and roasty like this they remind me of
when I roast brussels sprouts in the
oven and roasted brussels sprouts are my
very favorite vegetable and I love all
vegetables but that one is my fave and I
make them a lot um but Robert loves kale
chips
I got the second batch in and I still
have another another batch left sorry
he’s vocal tonight I don’t know if you
can see him down there thinking he wants
kale chips he probably needs a kale chip
and no more kibble huh yeah my dip
smells so good too it’s late at night so
I can’t even try them although I want to
eat this entire plate um it’s too late
for me but the dip is nice and Whippy
because it’s yogurt but these chips are
a little
fragile oh I still want to eat that
maybe I’ll wake Robert up until I got
kale chips he’s already in bed 8:00 p.m.
he’s in bed I’m doing videos he was
excited when I told him I would be
making kale chips though oh and by the
way it was set on 400 and they took 5
minutes and they do shrink up a great
bit so you can actually overlap them a
little bit but super yummy
if you like kale especially if you like
kale you need to give this a try Okay so
one bunch of kale really makes quite a
few chips they’re best if you eat them
this way
now if you must save
them if you in if you’re in a humid
humid environment you’re going to want
to put them in an airtight container if
you are in an aid climate such as myself
I would just put them in a container and
put a paper towel over them for the next
day
they will not keep for too long though
try to eat them this way you know you
want to oh and uh he got a cal chip and
he was super happy about
it pretty I’m pretty sure I saw him
doing cartwheels a minute
ago they can have a little Cale but it’s
so full of minerals that you can’t give
them a lot okay so that’s how easy it is
to make kale chips they are super yummy
don’t knock it till you try it it is
really good they are good and so is dip
with Greek yogurt just switching out
your sour cream it’s a good switch out
it’s full of protein and
delicious and again I will link

description box below for you I did
Green Onion here today but you can
certainly do any of the dips I think
I’ve got an array of different dip
