Chicken Bacon Ranch Pasta Salad
1 lb pasta, cooked and drained
200 grams, boneless, skinless rotisserie chicken breast chopped
1/4 red onion, diced
1 green bell pepper, diced
1/2 lb bacon, cooked crisp and chopped
Dressing: 1 cup plain nonfat greek yogurt, juice of 1/2 lemon, 1 Tbs ranch seasoing, salt, garlic powder, lemon pepper (season to taste)

hey guys welcome back to my Channel today I’m at Costco and I’m here for one thing and one thing only and that is the Costco rotisserie chicken Costco sells a massive rotisserie chicken for only $4.99 and today I’m going to be using it in my meal prep for the week and I’m going to make three different meals out of one rotisserie chicken I also have my regular weekly meal prep to finish so let’s get going so we can meal prep at home hey guys I’m back for my Costco run I got my rotisserie chicken I will say Costco recently have switched to these bags over the containers and I actually think they’re more leak proof than they were before I always was worried about chicken juice sosing around in my trunk but these seem to be great little bags I can’t tell if the chickens seem a little bit smaller or maybe it’s just the packaging but anyway this is still going to give me a lot of good rotisserie chicken meat to use in my three recipes I’m meal prepping for the day today yesterday I did my regular grocery shop for the week I got a bunch of produce fruit veggies all the odds and ends I need to make my dinner meals for the week so I only have a few things I need to do on meal prep other than our rotisserie chicken items so let’s get started with today I got a prep my fruit for the week starting off my meal prep with a fresh cleaned kitchen and sink in my spray bottle I just have some white distilled vinegar I’m going to spray that around my sink Basin and then fill it with some cool water and about 1/2 cup of white distilled vinegar before dropping in my strawberries for a good soak [Music] I usually just let them sit for 1 to 2 minutes give them a little rinse and then they’re going to dry fully in my colander and then I’m going to repeat that process with my green grapes when your grapes are perfectly ripe if you shake them around in the water they should pop right off of the vine without having to pluck each one individually I actually kicked off my meal prep first thing early this morning by mixing some sourdough bread dough this is my 1day sourdough recipe where from mixing the dough to it coming out of the oven only takes 8 to 10 hours so I got one of these made for the week today look how beautiful it turned out super fluffy if you want to check out this recipe I just posted it recently so I will link it in the iard above it is time to move on to our rotisserie chicken I just kind of opened up the bag to let the seam out a bit I like shredding my rotisserie chicken fresh from the store when it’s still a little bit warm but not too hot to handle once you put it in the refrigerator it’s just a little bit harder to shred this like falls apart if you do it straight from the store for the rotisserie chicken I like to break it down into dark meat and white meat which I will be using across our three different recipes today so first I’m taking off the leg and Wing quarters separating them to the side then I’m removing all of the skin to remove the white meat breast of the chicken I just run my thumb down the breast bone between the bone and the meat you should be able to lift the entire breast away from the bones I make sure to get in between all the bones so you’re getting all of that dark meat off of the chicken as well but if you’re up for a project keep all of your bones and the carcass of the chicken you can pop this into your crock pot and make a delicious homemade chicken stock by letting it slow cook with water and some aromatic vegetables and spices I chopped through the dark meat really well just to make sure I didn’t get any bones cartilage or skin left in my meat and then it’s time to prep our first recipe this is ridiculously simple I put all of my chopped dark meat in the bottom of my crock pot along with a jar of cheese and kada soup this one I found at my local HB it’s the cookwell and Company brand this soup is great on its own but I like adding the chicken for a little bit of extra protein and texture I’m just going to let these cook together on low for a couple hours until it all comes up to a nice bubbly hot temp what we’re going to be doing is having this ready to go for dinner tonight and then we’ll use the leftovers as meal prep for other meals this week meal prep number two is going to be a chicken bacon ranch pasta sink salad this one comes at the request of my husband he loves having pasta salad meal prep for the week just because it’s so easy to pop in a container and take to the office for lunch my girls also love a pasta salad so this one really appealed to the whole family so I just cooked up a pound of faral bow tii style pasta noodles until a little past Al Dente then I let them just hang out in the strainer In My Sink until I was ready to mix everything together and for them to cool down completely I’m starting to realize every time I have on my docket to film a video for you guys it gets really dark outside in the middle of the afternoon when I typically film and it rains so lights on the mixings for this recipe are going to be one of the chicken breast sliced and Cubed I’m also weighing out my chicken for all these recipes so I can accurately calculate the calories for this meal prep currently I am tracking calories and protein for my Wellness Journey so once that’s cut and measured I add it to our cooled pasta I’m also dicing half of a large red onion I’m going to be using about 3/4 of this in this pasta salad recipe and reserving one quar of what I have chopped for the next meal prep just setting it to the [Music] side I also have one large green bell pepper that I’m going to dice and de [Music] seed adding that straight into my bowl with the other ingredients and you can’t have a chicken bacon ranch pasta salad without the bacon so I crisped up half a pound Millie did you smell the bacon it’s for the meal prep that’s for the meal prep all right I’ll give you a little piece you’re so spoiled literally so spoiled my crisp bacon that Millie let me keep also gets a rough chop and I’m going to reserve it to the side until after after I’ve mixed the dressing in so it doesn’t get soggy speaking of the dressing this is going to be a Greek yogurt-based creamy dressing so I’m using one cup of plain nonfat Greek yogurt adding in the juice of half a lemon a tablespoon of ranch seasoning blend I give that a mix and then from there you can kind of see how the texture is I thought mine was a little thick to coat the pasta so I added in just 1/4 cup of water and mixed again until it drizzled I poured the dressing on top of my pasta chicken and veggies gave it a good mix and finally crumbled in my crisp bacon bits I went back and added some more seasoning to it including some salt garlic powder and lemon pepper a little seasoning can go a long way make sure to taste your food and adjust your seasoning to your preference that’s so good all right I’m back I took a quick break because nor my 2-year-old woke up from her nap so I’ve been with her for a little bit I got the kitchen fully cleaned and reset so we are ready for our final rotisserie chicken meal prep these I think I’m actually most excited for these are going to be some chicken pesto stuffed P breads this one is a recipe I actually found on Tik Tok so I will link the original recipe Creator in my description box along with the full recipe and recipes for all the other meals I showed you guys for today but let’s get going I got one more to do before we are in that crazy dinner time time zone for my family we can do it luckily I’ve been cooking all day and everyone’s just going to get their pick of whatever of the meal preps they want for tonight as dinner I always leave one space on my weekly meal plan as either like a leftovers night or if I’m meal prepping meal prep night which means take your pick as long as it’s already made first step in our stuffed pasas is going to be making the PE bread dough these are fresh homemade peas this recipe works great if you want to just make plain Peter bread but also is amazing in the stuffed options which are going to be great to use for lunch prep as well as I can pop them in my freezer as a freezer meal prep well I’m not always perfect I was just like go go go trying to get this last recipe done and I didn’t read the directions and I put all of the ingredients for making the PE bread in my mixer but I skipped the step of blooming the yeast which just means I should have put the dry active yeast into the warmed water and milk mix mixture with the honey so it could get frothy and active so I guess we’re just going to hope this works close it up lock it and mix it [Music] up all right so I added just a touch of flour so it wouldn’t stick to my hands but this is a really nice smooth dough I only needed it um with the dough hook on the mixer for like maybe 3 to 5 minutes then just cover with some plastic wrap and we are going to set this aside until it doubles ins size and Rises it should take probably like 1 to 2 hours my kitchen is pretty warm today so probably only about an hour um in the meantime let’s get that filling made cuz we’re making stuffed pasas I cubed up my last chicken breast left for my rotisserie chicken and weighed it out so I could input that for my calories in the recipe I also tossed in that little bit of red onion I had set aside it probably was about 1/4 of a cup of chopped Red Onion then I have a block of low moisture part skim mozzarella cheese I just went ahead and shredded that with my cheese grater and then I went ahead and bought some pesto from the store you can use your own homade version if you like it I used half this jar which was about 3 and 1/2 oz mixed it all in with with my chicken onion and cheese and that’s our filling mixture about an hour and a half later my dough had totally doubled in size I sprinkle with a little bit of flour so it doesn’t stick to me and punch down the air that’s the best part of making dough is punching out that extra air so satisfying I dumped it onto a flowered work surface and just gave it a couple needs divid it into eight equal pieces and then one by one I’m going to take each of my dough balls flatten it out use a little bit of flour on each side as you need so it won’t stick and once it’s less than an e/ of an inch fin use two heaping spoonfuls of filling pull one Edge over the filling to the other and press firmly around all the edges so everything’s sealed up inside then just Pat it flat on each side you want to make sure there’s no Hol so the filling won’t leak out I repeated that step with all eight petas then I heated up some avocado oil spray in my cast iron skillet over medium Heat placed about three pasas in at a time I cooked them for about 1 and 1/2 minutes on each side and then repeated two more times so they cooked for a total of about 6 minutes and I just rotated them about every minute or so so they wouldn’t Burn by then our crispy pea is warmed all the way through we have some nice gooey cheese with that yummy chicken and pesto filling delicious finally time to stop prepping and have a little bit of dinner I’m having some of the chicken enchilada soup that I prepped at the beginning of the day this was so good I just added a tablespoon of some shredded white cheddar cheese and a little bit of green onion this was such a satisfying delicious dish on a rainy evening we can’t finish our weekly meal prep without having a little something sweet recently I bought a ninja creamy I’m especially loving making protein ice cream for a healthy protein filed sweet option in the evening so today I’m actually making a chocolate peanut butter flavored protein ice cream I’m using a Premier Protein in the chocolate peanut butter flavor and then I took some suggestions from friends here in the comments to help make my protein coffee a little creamier by adding half a cup of 4% fat cottage cheese as well as 2 tbspoon of sugarfree chocolate fudge flavored Jello-O pudding mix I am taking the extra step of blending this all together in my Ninja blender and look at this smooth creamy base that it made now the hard part is waiting 24 hours for it to freeze but with a little editing magic I’m sharing with you guys how it came out the next day so the next evening after 24 hours in the freezer I took it out and I processed it in my ninja creamy I ended up spinning it twice on the light ice cream cycle and this came out so much creamier than the last protein ice cream I made it almost had a little bit of a marshmallowy texture to it this is such a great low calorie high protein option for a sweet treat at night you could easily eat the whole pint if you wanted to I split mine with my husband while we watched a show that evening on TV and it was a great little evening dessert okay I’m through with yet another round of dish cleaning we got a lot done today I have so much meal prep for the family this week we have our chicken enchilada soup our bacon chicken ranch pasta salad as well as those delicious cheesy pesto chicken stuffed pasas we even made sure to have a little bit of sweet treat ice cream prepped in the freezer for our new ninja creamy I’ll have more of those recipes and howto videos coming out soon anyway our weather is kind of taking a turn for it we’re watching the news for
