It’s a unique quick bread recipe that’s not only mouthwatering but also includes the health benefits of rolled oats. Once you give this oat bread a try, you’ll forget about store-bought bread. Let’s start baking together!
Ingredients:
For the Starter:
• Water: 3 ½ tbsp. (50 ml)
• Sugar: 1 tsp.
• Fresh yeast: 1 tsp. (3 g) or dry yeast: ½ tsp. (2 g)
• Bread flour: ½ cup (60 g)
For the Dough:
• Water: 1 cup (230 ml)
• Rolled oats: 1 cup (80 g)
• Bread flour: 2 cups (250 g)
• Salt: 1 ½ tsp. (9 g)
This recipe doesn’t require any kneading, just mixing! I use a unique method I call “lift and slap”, together with “stretch and fold”, to help the dough rise nicely. The dough is then shaped into a beautiful loaf, coated with oats, scored and baked to perfection. The result? A crust that sings and a soft, flavorful inside that’s perfect with butter. The oats bread has a richer flavor and lasts longer (if you don’t eat it all in one day, like I did).

The crust is amazing! Crispy outside, soft inside Water – 1 cup (230 ml) Rolled oats – 1 cup (80 g) Mix and set aside For the starter: water – 3 ½ tbsp. (50 ml) For the starter: water – 3 ½ tbsp. Add the oats Quick mix Bread flour – 2 cups (250 g) Salt – 1 ½ tsp. (9 g) Mix until there’s no more dry flour Just mix, no need to… knead Cover and let rise for 30 minutes With a wet hand stretch the 4 sides of the dough And fold to the center Lift the dough from the center and slap it back I call this technique "lift and slap" Let rest for 30 minutes Repeat the steps from before Stretch and fold the 4 sides Lift and slap Let rise for 2 hours Let rise for 2 hours Or until it doubles in size Sprinkle flour on work surface Fold the dough so it’s easier to cut Cut in half Fold each part into a ball Rub against work surface to seal Flatten Roll and press down with your fingers Seal the edge Repeat with the second part Brush the surface with water Roll the bread in rolled oats Cover with a towel and let rise for 30 minutes Score the bread with a sharp blade or knife Splash with water Cover with another tray Bake at 430°F (220°C) for 20 minutes Remove the top tray Bake for 10 more minutes The aroma is incredible They sing!
