This Indian Style Quinoa Khichdi is all you need to sate your hunger pangs while keeping your health in check. Packed with loads of nutrition and perfect for a healthy lunch. This Quinoa Khichdi is extremely easy to make and requires 10 minutes to cook. So let’s get started.

Ingredients:
Soaked Quinoa 1/4 cup
Soaked Yellow Moong Dal 1/4 cup
Water 200 ml
desi ghee 1 tbsp
Oil 1 tbsp
Cumin Seeds 1/2 tsp
Whole Red Chillies 4-5
Ginger (grated) 1.5 tsp
Curry Leaves 7-8 leaves
Turmeric Powder 1/4 tsp
Hing 1/8 tsp
Pink Himalayan Salt 1 tsp
Sliced Carrot 1/4 cup
Chopped Green Beans 1/4 cup
Sliced Onions 1 medium-sized
Slit Green Chillies 2
Salt 1/4 tsp
Lemon Juice 2 tsp
Chopped Coriander Leaves 2 tbsp
Chicken cubes 100gms (optional)

Preparation:
-Soak 1/4 cup quinoa and 1/4 cup moong dal in water for 30 minutes. It is important to thoroughly rinse & wash quinoa 4-5 times under tap running water before cooking. Soak for about 30 minutes.
-Chop green beans, slice onions and carrots. Set aside for later.

How To Cook:
-Add oil and ghee, cumin seeds, whole dry red chilies, hing, and ginger in a pressure cooker. Stir fry on low heat for a minute.
– Add sliced onions, and fry until light brown. Add sliced carrots, green beans, and green chilies. Sprinkle turmeric powder, pink Himalayan salt, and salt. Stir fry for 3-4 minutes until veggies are soft on medium heat.
– Add the soaked quinoa and moong dal. Chicken is completely optional. (If you wish to make it vegetarian, please skip chicken from the list of ingredients). Mix & fry for 5 minutes on medium heat. Cover & Pressure cook until 2 whistles on high heat.
– Remove the lid and turn on the heat again. Add 100 ml of Water or as required to adjust the consistency of the khichdi as desired.
– Squeeze some lemon juice and garnish with coriander leaves. Mix, stir & simmer for a minute. Turn off the heat.
– Serve hot
