24oz chicken breasts
salt & pepper
garlic powder
1/4 cup corn starch
spray oil
3/4 cup sugar free orange marmalade
3/4 cup sugar free BBQ sauce
2 Tbsp soy sauce
Rice Mixture:
1 (10oz) bag frozen cauliflower rice
2 cups cooked jasmine rice
Optional: green onions, sesame seeds
1) Measure 24oz of raw chicken, cube it, and season well with salt, pepper and garlic powder. Add the corn starch to the chicken pieces and mix to coat all chicken pieces.
2) Heat a large non stick pan on medium high on the stove. Coat with spray oil and add the chicken pieces. Brown the chicken pieces on each side for 3-4 minutes. I did this in two batches. Move the browned chicken pieces to a crock pot.
3) In a small bowl, whisk the marmalade, BBQ sauce and soy sauce. Pour over the chicken in the crock pot. Set on low and cook for 2 hours.
4) Cook the cauliflower rice according to the package directions and in a large bowl mix the cauliflower rice with 2 cups of cooked jasmine rice.
5) Serve 1 cup of the rice mixture with 1 cup of cooked orange chicken and garnish with green onions and sesame seeds if desired
