Warm up with this hearty vegetable soup! Packed with veggies, beans, and flavorful spices, it’s perfect for meal prep and stays fresh for days. Great for lunch, dinner, or leftovers!
Ingredients:
* 1-2 tbsp olive oil
* 1 onion, chopped
* 3 garlic cloves, minced
* 1 can diced tomatoes (28oz)
* 2 cups carrots, chopped
* 1 yellow squash, chopped
* 1 zucchini, chopped
* 1 cup chopped spinach
* 2 cans kidney beans, drained
* 3 cups vegetable or chicken broth
* 1 tbsp basil, oregano, parsley
* Pinch of rosemary, cayenne
* Salt & pepper to taste
Instructions:
1. Heat olive oil in a pot. Sauté onion & garlic for 3-5 minutes.
2. Add remaining ingredients. Stir well.
3. Bring to a boil, reduce to a simmer, and cook for 30-40 minutes until veggies are tender.
4. Serve warm and enjoy!
