This recipe is an excellent way to include sprouts as we know that sprouts shouldn’t be eaten raw. The original recipe requires overnight soaked whole green moong but I use sprouts to make this amazing nutrient dense meal in my breakfast. Since I am not a sprouts fan,this is one way I like including any sprouts in my meals.
Green moong sprouts are a highly nutritious food, packed with protein, vitamins, and minerals. Here is the approximate nutritional breakdown for 100 grams of raw green moong sprouts:
Calories: 30-35 kcal
Protein: 3-4 grams
Carbohydrates: 5-6 grams
Fibre: 1-2 grams
Sugars: 1-2 grams
Fat: 0.2-0.5 grams
Rich in Vitamin C,A,K,Folate (Vitamin B9)
Rich in Minerals
Calcium,Iron,Magnesium,Potassium,Phosphorus
Water Content: 85-90%
Recipe
1/2 cup soaked green moong dal/Sprouts
Small piece of ginger
Small piece of green chilli
1/4th tsp whole cumin
1 tsp ghee (cooking oil)
Veggies
40g full fat paneer
Salt
Gunpowder/podi
Blend dal with ginger,green chilli,cumin into a fine thick batter consistency and add salt to season.
Spread over a dosa tawa ,add ghee,veggies and paneer, now sprinkle podi/gunpowder and enjoy.
