*It has come to my attention that I state that this recipe is whole foods when in fact it does have a small amount of pea protein that is processed. I wanted to clarify and don’t want to mislead anyone.

Gluten Free Low Fat Seitan
Ingredients
1 cup cooked chickpeas (or white beans)
1/2 cup cooked lentils (red or brown)
1/2 cup Lupini bean flakes or chickpea flour
1/4 cup oat flour (certified gluten-free if needed)
1/2 cup pea protein powder (unsweetened and unflavored)
1 tablespoon nutritional yeast
1/2 to 1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
2 teaspoons whole psyllium husk not powder
1 tablespoon tamari (or coconut aminos for soy-free)
1/2 cup vegetable broth (or water)
1 teaspoon apple cider vinegar
Instructions

Preheat your oven to 350°F (175°C). Line a baking tray with foil and parchment paper on top of the foil.

Blend Wet Ingredients
In a food processor, blend the chickpeas, lentils, vegetable broth, tamari, and apple cider vinegar until smooth.

Combine Dry Ingredients
In a large mixing bowl, combine the Lupini bean flakes or chickpea flour, oat flour, pea protein powder, nutritional yeast, psyllium husks and spices.

Mix Wet and Dry
Add the wet mixture into the dry and mix until a dough forms. Add more water 1 Tablespoon at a time if too dry. If too wet sprinkle a bit more flour.

Place the dough onto the baking sheet on top of the parchment paper and shape into a loaf. Fold the parchment paper around loaf then wrap the foil around the parchment paper as seen in the video.
Bake in a preheated over @350 degrees for one hour flipping after 35 minutes the continue baking for another 25 minutes. You may need to bake longer depending on your oven. Let cool for 5-10 minutes before slicing. If you want to slice it very thin then refrigerate it over night.
Serves 3
384 calories per serving and 36 grams of protein.
