Street corn Chicken Salad!

3/8 English cucumber, halved and sliced (about 3/4 cup)
– 1/2 cup rotisserie chicken, chopped
– 1 tablespoon cilantro, minced
– 3/4 green onion, sliced
– 1/4 jalapeño, seeded and diced
– 1 tablespoon red onion, diced
– 1/8 red bell pepper, seeded and diced
– 3.8 oz (about 1/2 cup) sweet corn, drained

– Dressing:
– 2 tablespoons plain Greek yogurt (2% or higher for creaminess)
– 1 tablespoon plus 1 teaspoon mayonnaise
– Juice and zest of 1/4 lime
– 1/4 clove garlic, finely minced or grated
– 1/4 teaspoon chili powder
– 1/8 teaspoon paprika
– 1/8 teaspoon cumin
– Pinch of salt and freshly cracked pepper
#### Instructions
1. Prepare the Vegetables and Chicken:
– In a medium bowl, combine the sliced cucumber, chopped chicken, cilantro, green onion, jalapeño, red onion, red bell pepper, and sweet corn.
2. Make the Dressing:
– In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice and zest, garlic, chili powder, paprika, cumin, salt, and pepper until well combined.
3. Combine and Serve:
– Pour the dressing over the salad ingredients and toss until everything is evenly coated.
