Today I am recreating take out and fast food meals at home for way less WeightWatchers points/calories!! Today I am making Potbelly chicken enchilada soup, Dave’s hot chicken sandwiches, and DPdough mac daddy calzones!

Chicken enchilada soup (8 servings)- 2 points per serving
About 293 calories, 7g fat, 20g carbs, 28g protein

1 tsp minced Garlic
1 small yellow Onion
1 Jalapeño
1 Bell pepper
2 tsp cumin
1 tsp garlic powder
3 tbsp flour
8 cups chicken or bone broth
1.25 lbs chicken breast (or cooked rotisserie chicken)
1 can Black beans
1 can tomatoes with chiles
1 can sweet kernel Corn
1/2 cup enchilada sauce
1/2 shredded reduced fat Cheese
6 light Laughing cow wedges

Hot chicken sandwich-(makes 4) 6 points per sandwich
About 344 calories, 4g fat, 39g carbs, 39g protein

4 Buns
4 thin sliced Chicken breast
Brine: 1 cup pickle juice
1 cups fat free milk
2-3 tbsp hot sauce
Seasoning of choice (I used hot honey)

2 cups Slaw mix
1/2 cup plain nonfat Greek yogurt
Salt & pepper
Paprika
Chipotle sauce (I used cholula)

1/4 cup flour
1/2 cup panko
Paprika, cayenne, garlic powder, onion salt
1-2 eggs

Bake at 425 for 10-12 minutes, flip and bake 10 more mins or until cooked through

Sauce: 1/4 cup Greek yogurt, 1 tsp chili honey, 1-2 tsp chipotle sauce

Mac daddy calzone (makes 2)-14 points
About 553 calories, 6g fat, 95g carbs, 30g protein

1 cup plain nonfat Greek yogurt
1 1/3 cup all purpose flour
1 tsp baking powder
Seasoning of choice
1 serving Mac and cheese (I used Goodles)
1 sliced turkey dog
Garlic salt

Bake at 400 for 10 minutes, flip and bake 6-8 more minutes or until golden brown
