Fresh Chickpea Salad with Zesty Mustard Dressing | Quick & Healthy

Light, zesty, and packed with flavor — my go-to salad when I want something quick and healthy!

Ingredients (Serves 2–3):

For the Salad:
• 200g cooked chickpeas
• 1 medium cucumber, chopped
• ½ medium onion, finely chopped
• 1 medium tomato, deseeded and diced
• 100g green olives, chopped
• A generous handful of fresh coriander (or parsley), chopped

For the Dressing:
• Juice of 1 lime or lemon
• 2–3 tbsp imli (tamarind) paste (or use balsamic vinegar instead)
• 2 tbsp Dijon or wholegrain mustard
• 2 tbsp extra virgin olive oil
• 2 tbsp honey (or to taste)
• Salt and black pepper, to taste

Recipe:
1. In a large bowl, combine chickpeas, cucumber, onion, tomato, olives, and fresh coriander.
2. In a separate bowl, whisk together lime juice, tamarind paste(or balsamic vinegar), mustard, olive oil, honey, salt, and black pepper until smooth.
3. Pour the dressing over the salad and mix well until everything is coated evenly.
4. Serve immediately and enjoy!
