Chinese-Style Spring Salad

Ingredients
• 8 oz lettuce (hand-torn)
• 6 oz baby spring mix
• 4–6 carrots, peeled into thin strips
• 1 small purple onion, thinly sliced
• 4 mini cucumbers, smashed and chopped
• 2 sweet mini peppers, cut into bite-sized pieces
• 3 garlic cloves, minced
• 2 scallions, chopped
• 1 tsp salt
• 3 tbsp honey
• 2 oz vinegar
• Juice of 1/2 fresh lemon
• 1.5 oz soy sauce
• 1/4 cup homemade chili oil (adjust to your spice level)
• 1 tbsp sesame seeds

Directions
1. Wash and tear the lettuce by hand.
2. Add the baby spring mix or any fresh veggies you like.
3. Add carrots, onions, cucumbers, sweet peppers, garlic, scallions, salt, honey, vinegar, lemon juice, soy sauce, and chili oil.
4. Gently mix everything together, sprinkle with sesame seeds, and enjoy!
