CHICKEN BROCCOLI “RICE” CASSEROLE 🥦
Ingredients:
1 tbsp olive oil (15 g)
1 1/2 lbs chicken breast (24 oz) diced into bite size pieces
2 1/2 tsp salt, divided
1/2 tsp pepper
1/2 small yellow onion (100 g) diced
4 cups broccoli florets (364 g)
2 12oz bags frozen riced cauliflower
1 10.5oz can condensed cream of chicken soup
1/2 cup non fat plain greek yogurt (113 g)
1/2 cup fat free milk (120 ml) or milk of choice
1 tbsp lemon juice (15 g)
4 oz cheddar cheese (113 g) ~1 1/3 cups freshly grated
2 tsp garlic powder
2 tsp paprika
Instructions:
1. Preheat oven to 400 F and lightly grease a 9×13 casserole dish.
2. Heat olive oil in a deep skillet on medium high heat. Add chicken and cook, adding 1 1/2 tsp salt and 1/2 tsp pepper, until fully cooked (~5 min). Remove from pan.
3. Add onion and cook for just a minute, until fragrant. Add broccoli and frozen cauliflower rice, cooking until defrosted. Add 1/2 cup water, cover with lid and steam 5-10 min, until cauliflower is very soft.
4. Add soup, yogurt, milk, lemon juice, 1/3 of the cheese, garlic powder, paprika and 1 tsp salt. Stir together, then add cooked chicken.
5. Transfer mixture to 9×13 dish, top with remaining cheese and bake 15-20 min, until bubbly and cheese is melty.
