– 4 cups cauliflower rice (approximately 1 head of cauliflower. You can use your favorite rice if you prefer)
– 6 eggs
– 1 grated carrot
– Chives, paprika, pepper, salt, and oregano to taste
– 1/2 cup light mozzarella cheese (to taste)
– 1 tablespoon baking powder

Makes 6 servings, each with approximately 140 calories, 5g of carbs (3g of fiber), 9g of protein, and 9g of fat.
