INGREDIENTS:

Dressing:
-2 tablespoons soy sauce or vegan fish sauce
-1 tablespoon chilli sauce or chilli paste
-1 tablespoon fresh lime or lemon juice
-1 teaspoon soft brown sugar
-salt
-1-2 thai red chillies, deseeded & finely chopped

Salad:
-1 or 2 firm large mangoes, cut into strips
-1 small cucumber, cut into strips
-1/2 a red bell pepper, cut into strips
-1 small wedge red/purple cabbage, thinly sliced
-finely chopped mint leaves
-finely chopped coriander leaves

Garnish:
-1/4 or 1/2 cup peanuts
-finely chopped mint leaves
-finely chopped coriander leaves
-thai basil leaves or sweet italian basil leaves
