1 c whole wheat flour (120g)
1 ⅓ cup oats (120g)
⅔ tsp baking powder
1 pinch salt
½ cup coconut, date or brown sugar (80g)
½ tsp ground ginger or cinnamon or vanilla extract
3-5 tbsp non dairy milk, to adjust the consistency
2 cups small-diced strawberries (2 large handfuls)
1 tsp cornstarch
1 tbsp lemon juice
½ tsp lemon zest
→ yields a 22cm square baking tin, 9 slices

#2 Deep-dish Chocolate Chip Cookies 3:45
lil bit of coconut for greasing
1/2 cup creamy nut butter (65g)
2 ½ tbsp sugar of choice
1 ½ tbsp agave or maple syrup
a few drops vanilla aroma
⅓ cup ground almonds (40g)
⅓ cup whole wheat flour (40g)
1 tbsp tapioca starch
¾ tsp baking powder
pinch of salt
1-2 tbsp non dairy milk to adjust texture
1-2 tbsp chocolate chips
For serving: vanilla ice cream, banana ice cream, yogurt, flaky sea salt

4 large dates or 6-7 smaller ones, soaked and mashed
2 cups oat flour (180g)
1 cup ground almonds (120g)
1 tsp baking powder
1 tsp vanilla Extract
¾ cup (180ml) Soy or Oat Milk (+ 2-3 Tbsp if needed)
for the cream:
¾ cup cashews (105g)
1 ¼ cup (300g) thick vegan yogurt
2 tbsp vanilla protein powder, optional
3 tbsp maple syrup
pinch of salt
1 tsp vanilla extract
5-6 tbsp strong black coffee
2 tbsp unsweetened cocoa powder for the top

225 g thick vg yogurt (1 cup)
85 g almond, cashew or peanut butter (1/3 cup)
170 g dark chocolate chips (1 cup) + 1/2 tbsp coconut oil
2 tbsp maple syrup or other sweeter (optional)
crushed peanuts, flaky salt for the top
→ yields 12 – 16 yogurt bites (recipe can be cut in half to create 1 batch)
how i melt chocolate:
*Feel free to use whatever melting method works best for you. For this recipe, I use the following: Melt the chocolate in the oven in a medium oven proof bowl at 300.F (150.C) for 5 minutes. Carefully remove the bowl and let sit for 5 minutes before mixing the chocolate until fully melted.
