Nishasta (Wheat Starch ) Halwa Recipe (Kashmiri Style)

Nishasta Halwa is packed with health benefits — it boosts stamina, strengthens bones and joints, improves digestion, and supports women’s health during menstruation, pregnancy, and postpartum recovery. Ingredients (for 2–3 servings)
Nishasta (Wheat starch) – 4 tbsp
Water – 1 cup (for soaking) + 1 cup (for cooking)
Ghee – 2–3 tbsp
Sugar – 4–5 tbsp (adjust to taste)
Saffron strands – 6–8, soaked in 1 tbsp warm water or milk
Dry fruits – 2–3 tbsp (almonds, walnuts, cashews, chopped)
Cardamom powder – ¼ tsp (optional, for aroma)
Poppy seeds for garnish

Method
1. Soak the Nishasta
In a bowl, mix 4 tbsp Nishasta with 1 cup water. Let it soak for 2–3 hours. After soaking, stir well to make a smooth slurry (no lumps).
2. Prepare the base
In a thick-bottomed pan, melt 2–3 tbsp ghee on low flame. Add the saffron-infused water/milk to the ghee.
3. Cook the Nishasta
Slowly pour the Nishasta slurry into the ghee, stirring continuously. Add 1 cup more water to adjust consistency.
4. Add sweetness & flavor
Mix in the sugar and stir until dissolved.
Sprinkle in cardamom powder (if using).
5. Simmer on low flame
Keep cooking on low flame, stirring regularly, until the mixture thickens and turns glossy. The ghee will start separating from the sides when done.
6. Finish with dry fruits
Add chopped dry fruits and mix well. Serve hot for best taste.
