🛒 Ingredients (1 lb loaf pan)
 • 3 ripe bananas (≈1 cup mashed)
 • 3 eggs (yolks separated from whites)
 • ¼ cup homemade oat milk (add 1–2 tbsp extra if batter feels thick)
 • 1 tbsp pure maple syrup
 • 1 tbsp lemon juice
 • 1¾ cups oat flour (fine texture)
 • 4 tbsp dark chocolate chips (sugar-free or 70% cacao)

👩‍🍳 Instructions:
 1️⃣ Preheat oven to 350°F (175°C). Lightly grease or line a 1 lb loaf pan.
 2️⃣ In a bowl, mash bananas and mix with egg yolks, oat milk, maple syrup, lemon juice, and oat flour until smooth.
 3️⃣ In another bowl, beat egg whites until foamy and gently fold into the batter.
 4️⃣ Stir in 3 tbsp chocolate chips, pour into loaf pan, and sprinkle remaining 1 tbsp on top.
 5️⃣ Bake 35–40 minutes until golden and a toothpick comes out clean. Let cool before slicing.
