UP-Style Aloo Kachori Recipe

🌾 For the Dough
•1 cup wheat flour (atta)
•1 tbsp curd (dahi)
•1 tsp oil or ghee
•Salt to taste
•Water as needed to knead a soft, smooth dough

🌺 In a bowl, mix wheat flour, salt, curd, and oil.Add water little by little and knead a smooth dough.Cover and rest for 15–20 minutes.

🥔 For the Aloo Filling
• 2–3 medium boiled potatoes – finely grated or mashed (no lumps)
• 1 tsp coriander powder
• ½ tsp amchur (dry mango powder)
• ½ tsp cumin powder
• ¼ tsp garam masala
• A pinch of heeng (asafoetida)
• 1–2 finely chopped green chillies
• 1 tsp crushed kasoori methi
• 2 tbsp chopped coriander leaves
• Salt to taste

Once the potatoes are cool, Mix all ingredients together till well combined. The filling should be smooth, aromatic, and lump-free.

Method
1. Apply some oil on hands and dust rolling pan with dry flour.
2. Roll one dough ball slightly place filling in the center, and seal edges well.
3. Gently flatten into a disc — don’t press too thin.
4. Fry the kachoris slowly until golden and crisp on both sides on low flame . Serve with curd/ boondi raita/ your favourite green chutney.
