INGREDIENTS
Apple filling:
1 medium apple
1 tsp coconut oil
.5-1 tbsp maple syrup (depending on desired sweetness)
Cinnamon to taste
Optional 1/8 cup sliced almonds or other nut
Cheesecake filling:
.5 cup cottage cheese

1/8 cup egg whites
Outer layer:
1 egg
3 sheets of rice paper (6 if you want a double layer to make sure it doesn’t goo out)

DIRECTIONS
•Dice your apple before heating a pan over medium-low heat with some coconut oil. (I use a non toxic, non stick pan from Caraway- code 2EXPLOREWELLNESS10 https://ap.carawayhome.com/2explorewellness10
•Add maple syrup, cinnamon and almonds- cook until apples are soft and let cool while you prep the other ingredients.
•Blend your cottage cheese, protein powder and egg until smooth (note I tried this again with a different protein powder and it all burst out- so highly recommend using my suggestion)
•Mix your egg, protein powder, and if using, milk and sweetener in a shallow bowl.
•Dip 3 rice sheets in the mixture for a few seconds on each side and lay them overlapping on a surface.
•Add fillings near the bottom before rolling to form a long roll before spiraling it and adding some sesame seeds if desired. (Note not all the filling may fit)
•Bake or air fry at 375 until golden and crisp. (mine took about 20 minutes in my airfryer, but I’d check after 10!)
