After all the mithai and rich gravies, I was craving something that felt restorative without sacrificing flavor. My favorite Post-Festive Detox secret – Creamy, comforting, and 100% dairy-free – Zucchini Almond Soup is loaded with nutrients, incredibly easy to digest, and tastes like a warm hug. It’s my secret weapon for bouncing back and feeling light again. Seriously, it takes 15 minutes max.

Zucchini is very low in calories and high in water content, promoting hydration and aiding in healthy digestion. Broccoli is an excellent source of Vitamin C and K & linked to anti-inflammatory and cancer-fighting properties. Almonds are packed with Vitamin E which support heart health and provide sustained energy.

Recipe-
.
– Cut 2 medium size Zucchini into big pieces and keep aside.
– Now take pressure cooker and add 2 tsp butter, some crushed black pepper, 2 garlic cloves, 1 medium size sliced onion, 2 bay leaves and some salt.
– Saute for 1 minute.
– Then add chopped zucchini.
– I have added 1 cup chopped Brocoli (it’s optional as such)
– And add 10-15 almonds with skin.
– Now add 1 cup water, mix everything well and pressure cook on medium flame upto 2 whistles.
– After 2 whistles, let the mixture cool down.
– Then blend it smooth. If you wish you can sieve the mixture.
– Take the mixture into a pan, put it on slow flame and gently warm the soup. (Do not boil, just gently warm the soup).
– Then tear few basil leaves and add into the soup. Turn off the heat.
– Garnish soup with few sliced almonds, basil leaves and crush some more black pepper on top.
– If you wish you, you may also add some parmesan cheese.
