Ingredients:
1 tbsp butter
1 tbsp olive oil
1 onion, finely diced
1 capsicum, diced
2 cloves garlic, minced
3 ripe tomatoes, cut in half
Salt and pepper, to taste
A handful of grated cheese
4 eggs
Red pepper flakes, for garnish
Fresh coriander, chopped, for garnish
Toasted bread, for serving
Instructions:
Heat the butter and olive oil together in a large pan over medium heat.
Add the diced onion, capsicum, and minced garlic. Sauté for a few minutes until softened and fragrant.
Add the halved tomatoes, cover the pan, and let them steam gently for 10 minutes until the skins loosen.
Remove the tomato skins and mash the tomatoes directly in the pan to create a rich sauce.
Season with salt and pepper, then stir in the grated cheese until melted and combined.
Make four small wells in the tomato mixture and crack one egg into each.
Cover the pan again and steam on low heat until the eggs are just set to your liking.
Sprinkle with red pepper flakes and chopped coriander.
Serve hot with fresh toasted bread for dipping.
