I used long squash (bottle gourd) because it’s light and packed with health benefits, but zucchini works just as well. Julienne the veggie into strips, arrange in a spiral like a flatbread, pour the eggs on top, sprinkle sesame seeds, and cook both sides.

🥗 Ingredients
2 eggs, beaten with salt + chili flakes
1 tsp olive oil
1 small bottle gourd (or zucchini), julienned
Black sesame seeds for garnish

Heat olive oil in a pan.
Arrange julienned bottle gourd (or zucchini) in a spiral, forming a flatbread-like base.
Pour beaten eggs evenly over the veggie base.
Sprinkle black sesame seeds.
