Thai Curry Turkey Meatballs
Ingredients 
Turkey Meatballs
* 1 lb ground turkey 
* 1 egg 
* ¼ cup finely chopped Thai basil 
* 1 tbsp fish sauce 
* 1 tsp Thai red curry paste 
* 1 tbsp finely minced lemongrass 
* 2 cloves garlic, grated
* 2-inch thumb ginger, grated 
* 1 tsp kosher salt
* 1 tbsp oil
Red Curry 
* 1 tbsp oil
* 1-inch piece of ginger, grated
* 2 cloves garlic, minced
* 1 tbsp finely minced lemongrass
* 2 ½ tbsp high-quality red curry paste
* 2 ½ cups full-fat coconut milk
* ½ tsp fish sauce
* 2 tsp brown sugar
* ½ tsp kosher salt
* Juice from ½ lime
* Thai basil, to garnish
* Jasmine rice, to serve 

Directions
1. Start by making the meatballs. In a large bowl, combine turkey, egg, basil, fish sauce, curry paste, lemongrass, garlic, ginger, and salt. Mix well. Using wet hands, form gold ball sized meatballs and add to a plate.
2. Heat oil in a large skillet over medium heat. Working in batches, add meatballs in a single layer. Cook, undisturbed, until meatballs are brown on bottom then flip and cook for another 3-4 minutes. Repeat with remaining meatballs. Clean out skillet.
3. Heat 1 tbsp oil in the skillet over medium heat. Add garlic, ginger, and lemongrass. Cook for 1-2 minutes until fragrant, stirring frequently to prevent burning.
4. Add red curry paste and 2 tbsp coconut milk. Whisk to combine. Cook for 2 minutes until fragrant.
5. Pour in remaining coconut milk, fish sauce, and brown sugar. Bring to a boil, add meatballs sauce, reduce heat to simmer, cover, and cook for ~20 minutes until meatballs are cooked through.
6. Adjust taste with salt. Finish curry with lime and Thai basil. Serve over rice and enjoy!
