Description
This Vibrant Veggie Bottle Gourd & Beetroot Chila is a colorful, protein-rich Indian pancake loaded with the goodness of vegetables and paneer. Made from bottle gourd, beetroot, and besan (gram flour), it’s light, flavorful, and perfect for a healthy breakfast or lunchbox meal. The mix of spices and veggies like capsicum, tomato, and coriander gives it a fresh and zesty taste, while paneer adds a soft, creamy texture.
Ingredients
For the Chila Batter:
Bottle gourd (lauki) – ¾ cup (grated)
Ginger – 2 tsp (grated)
Garlic – 3 cloves (crushed)
Green chilli – 1 small (finely chopped)
Red chilli powder – ½ tsp
Salt – as per taste
Ajwain (carom seeds) – 1 tsp
Capsicum (finely chopped) – 1 tbsp
Fresh coriander – 2 tbsp (chopped)
Besan (gram flour) – 1 cup
Sooji (semolina) – ¼ cup
Water – as required (to make a smooth batter)
Chat masala – 1 tsp
Oil – 1 tsp (for the batter)
For the Filling/Topping:
Tomato – 2 tbsp (finely chopped)
Onion – 2 tbsp (finely chopped)
Coriander – 1 tbsp (chopped)
Green chilli – ½ tsp (chopped)
Paneer – 40 g (crumbled)
Beetroot – 2 tbsp (grated)
Yellow capsicum – 1 tbsp (chopped)
Procedure
Prepare the Batter:
In a large bowl, combine grated bottle gourd, ginger, garlic, green chilli, red chilli powder, salt, ajwain, capsicum, and coriander.
Add besan and sooji. Mix everything well.
Gradually add water to form a smooth, pourable batter (not too runny).
Stir in 1 tsp oil and chat masala. Let the batter rest for 10–15 minutes.
Prepare the Filling/Topping:
In a small bowl, mix chopped tomato, onion, coriander, green chilli, paneer, beetroot, and yellow capsicum.
Season lightly with salt or chat masala (optional).
Cook the Chila:
Heat a non-stick tawa or skillet and grease lightly with oil.
Pour a ladleful of batter and spread it evenly into a medium-thick circle.
Cook on medium heat until the edges start to lift.
Flip and cook the other side until golden and crisp.
Add the Filling:
Once cooked, spread the prepared veggie-paneer mixture on top.
You can fold it in half or serve it open like a pancake.
Serve Hot:
Serve the chila hot with mint chutney, curd, or tomato sauce for a wholesome meal.
🌿 Tips
You can add a little grated carrot or spinach for extra nutrition.
To make it vegan, skip paneer or replace it with tofu.
Adjust spice levels as per your taste.
