So next time you want something quick but full-on flavour, you know what to make!

🧆 For the Veg Seekh
Ingredients:
– Boiled potatoes – 2 medium (mashed)
– Grated paneer – 100 g
– Grated carrot – 2 tbsp
– Bell peppers (red & yellow), finely chopped – 3 tbsp
– Coriander, chopped – 1 tbsp
– Bread crumbs – 3 tbsp
– Peri peri seasoning – 1 tbsp
– Garlic – 6 cloves (crushed)
– Smoked paprika – ½ tsp
– Cumin powder – 1 tsp
– Kasuri methi (crushed) – ½ tsp
– Salt – to taste

Method:
1. Mix all ingredients into a smooth, well-bound mixture.
2. Take a portion and shape it around a skewer.
3. Chill for 15–20 minutes.
4. Grill or pan-sear with butter/oil until golden and cooked through.

🍞 For the Sourdough
Ingredients:
– Sourdough bread slices – 2
– Butter – 1 tbsp
– Peri peri seasoning – ½ tsp
– Coriander leaves – chopped
– Lettuce leaves – 2

Method:
1. Mix butter, peri peri seasoning, and chopped coriander.
2. Spread on sourdough slices and toast until crisp and golden.

🥣 Peri Mayo Dip
Ingredients:
– Mayonnaise – 3 tbsp
– Peri peri seasoning – 1 tsp
– Lemon juice – 1 tsp
– Honey – ¼ tsp
– Salt – a pinch

Method:
1. Whisk all ingredients together until creamy and smooth.
2. Chill for 10 minutes for best flavor.
