Anti inflammatory tea:
1.5 cup water
1/2 tsp grated ginger
1/2 tsp grated turmeric
1/4 tsp crushed black pepper corns
Simmer,pour,sip
Chia soaked in high protein yogurt:
1 tub yogurt
6 tsp /30g Chia seeds
3-4 tbsp water
Mix it all up and soak overnight. Gives 5 portions
Chicken kofta red curry:
200g chicken breast
Half onion chopped
Salt and pepper
Red chilli pow
Coriander pow
Garam masala pow
Chopped coriander
Ginger garlic and chilli
For curry
1 tsp Thai red curry paste
Chopped spinach
Chopped coriander
Salt
50ml coconut milk
Blend together chicken breast cubes,garlic,ginger green chilli.
Transfer it into a bowl and now add all the spices,seasoning,chopped onions and coriander.
Mix it well.
Now in a ceramic pan spray oil,either make balls or make cubes and sauté from both sides.
Now add curry paste and spinach and cook along. Add some water and cover and cook. Once the chicken is done turn off the flame and add coconut milk. Check seasoning,sprinkle coriander leaves and garnish.
