Soup season is here! Today we’re making a creamy Chickpea Soup with vegetables — nutritious, cozy, and perfect for lunch or dinner. This one-pot soup is loaded with chickpeas, veggies, garlic, and herbs, blended into a silky, delicious soup you’ll want to make again and again.
Ingredients used in the video:
• 1 red pepper (chopped)
• 1 stalk celery (chopped)
• 1 onion (chopped)
• 2 carrots (chopped)
• 3 shishito peppers (chopped)
• 1 bunch parsley (chopped)
• 8–10 garlic cloves (chopped)
• ½ kg chickpeas (1.1 lb) boiled
• 1 cup kale
• Olive oil
• Italian seasoning, paprika, black pepper, salt
• Nutritional yeast
• Vegetable stock / hot water
• Coconut milk
Preparation:
In a dutch pan, heat 3–4 tbsp olive oil. Add red pepper, onion, carrot, and boiled chickpeas. Mix well. Add shishito peppers and cook for 4–5 minutes on medium-high heat. Add garlic and sauté. Add kale and mix.
Add 1½ tbsp Italian seasoning, ½ tbsp black pepper, salt to taste, and 2 tsp paprika. Mix and cook for 4–5 minutes. Add 2 tbsp nutritional yeast, mix, and pour 3–4 cups vegetable stock or hot water. Cook for about 5 minutes.
Add parsley and blend the soup using a hand blender. Add ½ cup coconut milk and adjust consistency.
Your delicious chickpea soup is ready! Serve with bread, rice, or enjoy as is.
