Crunchy Maple Granola
Ingredients:
• 2 cups rolled oats
• 1/3 cup hemp hearts
• 1/3 cup uncooked quinoa (rinsed + dried on a towel)
• 1/2 cup coconut flakes
• 1/2 cup chopped nuts (almonds, pecans, or walnuts)
• 1/3 cup of pine nuts
• 1/2 tsp cinnamon
• dash of all slice
• two pinches of flakey salt
• 1/3 cup maple syrup
• Dash of honey
• Dash of olive oil
• 1 tsp vanilla of vanilla bean paste
• 1/2 cup golden raisins (added after baking)
• 1/2 cup of dried cherries
• 1 cup of chocolate chunks
Instructions:
Heat oven to 325°F and line a baking sheet with parchment.
In a large bowl, mix together the oats, hemp hearts, quinoa, coconut flakes, nuts, cinnamon, and salt.
Pour in the maple syrup, honey, oil, and vanilla, then stir until everything is evenly coated.
Spread the mixture into an even layer on the prepared baking sheet.
Bake for 22–28 minutes, stirring once halfway through, until golden and fragrant.
Remove from the oven and immediately sprinkle the golden raisins or dried cherries on top (don’t bake them or they’ll get too tough).
Let the granola cool completely so it crisps up, then break it into clusters.
Stir in the chocolate once fully cooled 🤍
ONE POT TURMERIC CHICKEN & RICE
Ingredients:
• 1 sweet onion
• celery (1 bunch)
• carrots (1 bag or bunch)
• dino kale (handful)
• garlic cloves (4)
• dash of olive oil
• dash of turmeric
• 1/2 stick of butter
• 1 cup of white rice
• chicken broth (1 container)
• 2 chicken breasts (for cubing)
• large spoonful of better than bouillon chicken flavor
Recipe:
In a large pot, add 1 whole sweet onion (diced), 3 chopped celery stalks, 4 chopped carrots, and a handful of chopped kale.
Sauté in olive oil with 4 grated garlic cloves until everything begins to soften.
Add a dash of turmeric, then drop in half a stick of butter and stir until melted.
Add 1 cup of white rice and stir to coat in the mixture.
Pour in one full container of chicken broth and let it simmer, stirring occasionally.
Add a spoonful of Better Than Bouillon chicken flavor.
Then add cubed chicken breast, cover, and cook until the rice is tender and the chicken is cooked!!
