We have an amazing P.volve + Cuvee Beauty inspired drink to celebrate National Mimosa Day! This recipe is a great way to control the amount of sugar in your drink while adding a lot of flavor.

INGREDIENTS
∙ 1/2 cup water
∙ 3 tbps coconut sugar
∙ 2 sprigs fresh thyme
∙ 2 peaches (if fresh) or 2 cups (if frozen)
∙ Champagne

INSTRUCTIONS
1. In a small saucepan, combine water, sugar, and sprigs of thyme.
2. Bring mixture to a boil; lower to a simmer and continue to cook for 5 minutes.
3. Remove from heat, stir, and completely cool in the refrigerator; about 15 minutes.
4. Remove sprigs of thyme and pour the syrup into a blender.
5. Add the peaches; puree mixture until combined and smooth.
6. Divide the peach-mixture evenly between 4 glasses.
7. Pour Champagne into each glass.
