One of the BEST Chocolate Cakes and MUCH FEWER Calories!



I invented this bread recently and I’m very happy with the result! It turned out incredibly delicious, very soft, and perfectly moist. And no one would ever guess that it contains zucchini! Also, it’s very easy and quick to make.
Ingredients:
1 medium zucchini. Wash, don’t peel. Grate on a fine grater or chop in a food processor. Don’t drain the juice.
1 cup of all-purpose flour (good gluten free alternative: ½ white rice flour, ½ tapioca starch or flour)
3/4 teaspoon of baking powder
1/4 teaspoon of baking soda
pinch of salt
1 egg
1/3 cup of softened or melted unsalted butter (not hot! Otherwise, the egg will partially cook 😊)
3/4 cup of granulated sugar (You can also use your favorite sugar substitute)
1/2 cup of cacao or cocoa powder (any)
*Optional: 1 teaspoon of vanilla extract or a pinch of vanillin
Combine all and mix well (check the bottom).
Pour the batter into a greased pan and place in a preheated oven (350°F/180°C). Bake till dry toothpick inserted in the center (about 45-60 minutes).
Desserts with cacao/cocoa lower the level of stress hormone cortisol and increase the level of serotonin, the hormone of relaxation and good mood.
Plus, this bread is not only delicious, but it has also far fewer calories than regular chocolate cakes!
