greek chicken dinner 🍋

ingredients (chicken):
• 1 lb chicken thighs
• 1/4 c greek yogurt
• 2 tbsp evoo
• zest + juice of 1 lemon
• 1-2 tsp dried oregano
• 1–2 cloves garlic, minced (or 1 tsp garlic powder)
• salt & pepper
• Japanese sweet potatoes

greek salad:
• cucumber, chopped
• tomato, chopped
• bell pepper, sliced
• feta
• Kalamata olives
• pepperoncini
• evoo
• red wine vinegar
• salt + pepper
• dried oregano

instructions:
• whisk together the yogurt, evoo, lemon zest + juice, oregano, garlic, salt, pepper. toss chicken to coat and marinate 30 min–24 hrs.
• sear until cooked through
• for the potato: bake whole at 350 for 60-90 min until soft + caramelized, cut and add butter inside + salt
• for the salad: mix cucumber, tomato, bell pepper, feta, olives + pepperoncini. drizzle with evoo + a splash of red wine vinegar, season with salt, pepper + oregano.
