This simple step-by-step method will give you perfectly fermented, tangy dhokla every time!

Ingredients:
• Rice
• Chana dal
• Toor dal
• Split yellow moong dal
• Buttermilk
• Green chillies
• Turmeric
• Salt
• Sugar
• Baking soda
• Hot oil

*RECIPE*

1. In a bowl, add rice, chana dal, toor dal, and split yellow moong dal.
2. Wash them well with water, then add buttermilk and soak the mixture overnight.
3. The next day, use a strainer to remove the excess buttermilk from the mixture.
4. Transfer the soaked mixture to a mixer jar, add green chilies and a little buttermilk, and grind into a smooth batter.
5. Pour the batter into a bowl and add turmeric, salt, and sugar.
6. Add baking soda and hot (boiled) oil on top, then gently mix.
7. Grease a plate or deep dish and spread the batter evenly.
8. Steam it on high flame for 15–20 minutes.
9. Once steamed, pour sugar water over the dhokla.
10. Cut into square pieces — and your soft & tasty Khatta Dhokla is ready to serve!
