Easy Healthy Advocado & Burrata Toast



Advocado & Burrata Toast

Ingredients

Handful of walnuts
1 lemon
1 avocado
2 thick slices of (sourdough) bread
2 garlic cloves
Juice of half a lemon
2 tbsp freshly grated Parmesan cheese
1/2 tbsp extra virgin olive oil
2 knobs of unsalted butter
1 tsp chili flakes
1 tsp paprika powder (I use la chinata)
1 burrata
1 tbsp dill
Zest of half a lemon
2 tbsp honey
Salt & pepper

Method

1. Chop the walnuts coarsely.
2. Cut the lemon and avocado in half and set aside.
3. Place the garlic cloves in a mortar with some salt and crush finely.
4. Now scoop both avocado halves into the mortar together with the juice of half a lemon and some pepper, and mash finely.
5. Now add the grated Parmesan cheese and the extra virgin olive oil and mash well.
6. Place a frying pan over medium-high heat and melt a knob of butter in it.
7. Toast the slice of bread for a few minutes until golden brown on both sides.
8. Clean the same pan or put another frying pan on medium eat and melt a knob of butter in it.
9. Add the chili flakes and paprika powder and mix well for one minute. Set aside.
10. Place another frying pan on medium-high heat and roast the chopped walnuts until golden brown in a few minutes.
11. Spread the avocado mixture over the toast slices. Next, slice the burrata open and spread it over the avocado mixture. Sprinkle some of the spicy butter over the burrata and sprinkle some of the chopped walnuts on top. Garnish with dill, the zest of half a lemon, and honey.
