Crispy Tofu Parmesan Sandwich:
1 block Tofu
1/2 – 1 Cup Marinara
French Bread
2-3 tbs vegan garlic butter
Vegan provolone cheese
Vegan mozzarella
Avocado oil for frying

Marinade:
3-4 tbs olive oil
2-3 tbs soy sauce
1 tbs basalmic vinegar
1 tbs dijon mustard
2 tbs nutritional yeast
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp basil
1 tsp Italian seasoning
Black pepper

Batters:
1 cup all purpose flour
1 tbs salt
Black pepper
1.5 cup panko
2 tbs freshly chopped parsley
1/4 cup vegan parmesan
1/4 cup chickpea flour
2 tbs flaxmeal
1/2 cup water

Vegan Pesto:
1 cup fresh basil leaves
2-3 tbs pine nuts
1/2 lemon juice
1/4 cup vegan parmesan
1/4 cup olive oil
2 cloves garlic,
Salt to taste
Black pepper to taste
