Mediterranean Beef Bowl 🥩🥗🔥

INGREDIENTS
– Avocado oil spray
– 1 lb lean ground (90/10)
– 1 tbsp fresh minced garlic
– 1 tbsp olive oil
– Greek or Mediterranean seasoning blend of choice
– Jasmine rice cooked in chicken bone broth
Lemon Dill Yogurt Sauce:
– 1 cup fat free plain greek yogurt
– 1 tbsp fresh minced garlic
– Juice of 1/2 a lemon
– 2-3 tbsp fresh chopped dill
– 1 tbsp olive oil
– Seasonings: Salt, pepper & paprika to taste.
Cucumber Tomato Salad:
– 1 english cucumber sliced
– 1 cup cherry tomatoes sliced
– 1 small red onion sliced
– 1/4 cup chopped parsley
– 2 tbsp fresh minced garlic
– 2 tbsp olive oil
– 2 tbsp balsamic vinegar
– 2 tbsp honey
– Salt & pepper to taste
Additional Toppings:
– Pickled red onions
– Hummus
– Seasoned & pitted kalamata olives
– Crumbled feta
– Chopped parsley
Note(s): Measurements are estimated. Adjust ingredients to your personal preference.
DIRECTIONS
1. Put together the salad and the yogurt sauce then place both in the fridge until ready to serve.
2. Get a large skillet going over medium-high heat. Spray with avocado oil then add in the beef. Let it cook unbothered for a few minutes to build a nice crust then break it up, add the minced garlic, olive oil and seasoning. Give it a mix and let continue cooking until done to your liking.
3. Assemble your bowl & ENJOY! 🙌🏻
