My 10 Min Go-To Salad
Listen…if I have 10 min to make my lunch I’m a happy girl! & I’m sure any mom can relate here.
Ingredients:
6 jumbo peeled Shrimps
Seasoned with:
Garlic powder
Onion powder
Paprika
Chili powder
Chopped lettuce
1 quartered Roma tomato
1/4 roasted corn
1/4 red onion chopped
1/2 avocado cubed
Minced cilantro (garnish)
For the quick dressing;
1/2 lemon juiced
1 tsp Dijon mustard

Salt & pepper to taste 1/2 tbsp avocado oil
Notes: season the shrimp and cook in a medium pan on medium heat coated with some avocado spray. About 2-3 min per side. Chop up your salad toppings and assemble as you prefer. For the corn after shrimp is done cooking I roasted them using the same pan for a minute or two until brown charred color appears.
In a small mixing bowl add dressing ingredients and whisk together.
Serve & enjoy!!
