FULL RECIPE ⬇️
INGREDIENTS
– 2 ~16 oz NY Strips (~1.25 in thick)
– Extra virgin olive oil
– SPG Rub (salt, pepper, garlic)
– Baguette (sliced into ~1/3 in thick pieces)
– garlic cloves
Bruschetta Tomatoes:
(combine all ingredients)
– 4 vine tomatoes (diced + seeds/guts removed)
– ~1/2 cup fresh chopped basil
– 1.5 tbsp fresh minced garlic
– 2-3 tbsp balsamic vinegar
– 1 tbsp extra virgin olive oil
– Salt & pepper to taste
Whipped Ricotta:
(blend all ingredients together)
– 15 oz whole milk ricotta
– 1.5 tbsp fresh mined garlic
– 1 tbsp extra virgin olive oil
– Salt & pepper to taste
Mix in ~1.5 tbsp fresh chopped parsley once blended
Additional Toppings:
– Balsamic glaze
– Fresh chopped parsley
Note(s): Measurements are estimated, adjust ingredients to your liking.
DIRECTIONS
1. Prepare the bruschetta tomatoes and the whipped ricotta. Place both in the fridge until ready to assemble.
2. Pat the steaks dry then coat in olive oil and season generously on all sides with SPG.
3. Drizzle the bread with olive oil.
4. For the steaks, sear them at level 4 on the Schwank Grill for about ~2-3 min per side or until they reach your desired internal temp. I pulled these off at ~130°F internal. Let the steaks rest for ~8-10 minutes.
5. Dip the bread in the steak drippings then toast until golden brown.
6. Rub some garlic on the bread, thinly slice the steak, assemble the crostinis & ENJOY! 🙌🏻
