Healthy Non-Fried Gobhi Manchurian (No Maida)

Ingredients
For Gobhi (Preparation)
• Cauliflower florets – as required
• Salt – for boiling
• Oil spray or little oil – for air frying / shallow frying
For Slurry / Batter
• Rice flour or all-purpose flour – ¼ cup
• Cornflour – ¼ cup
• Salt – to taste
• Black pepper powder – to taste
• Red chilli powder – 1 tsp
• Chopped garlic – 3 cloves
• Milk – 5 tbsp
• Vinegar – 1 tsp
• Italian seasoning / mixed herbs – 1 tbsp
For Frying / Air Frying
• Oil – for deep frying or
• Air fry at 200°C for 18–20 minutes, brushing or spraying lightly with oil, until crispy
For Sauces & Slurry
• Soya sauce – 1 tbsp
• Red chilli sauce / Sriracha / Schezwan sauce – 1 tbsp
• Green chilli sauce – ½ tbsp
• Tomato ketchup – 2 tbsp
• Vinegar – ¼ tsp
• Cornflour – 2 tsp
• Water – 4 tbsp (plus more to adjust consistency)
For Stir-Fry
• Oil – 2 tbsp
• Chopped garlic – 2 tbsp
• Grated ginger – 1 tbsp
• Chopped onion – 1 medium
• Green chillies – 2-3
• Chopped capsicum – ⅓ cup
• White pepper powder – ½ tsp
• Salt – as per taste
For Garnish
• Chopped spring onions
• Roasted sesame seeds
