Crispy Chickpea Pancake Wrap with Spiced Potato, Chutney & Cheese π« | Healthy Indian Wrap Recipe
This crispy besan chilla wrap is inspired by vada pav flavors, but made as a healthy, pan-cooked wrap. A soft gram-flour chilla is divided into four sections and layered with spiced potato stuffing, green chutney, cheese, and dry garlic chutney, then folded step by step into a perfect triangle.
Crispy outside, soft inside, spicy, tangy, and cheesy β best served hot off the pan.
For Besan Chilla Batter:
Gram flour (Besan): 1 cup
Semolina: 2 tbsp (optional)
Curd (Yogurt): ΒΌ cup
Water: ΒΎ cup (adjust to batter consistency)
Turmeric powder: ΒΌ tsp
Salt: ΒΎ tsp (or to taste)
Carrom seeds (Ajwain): Β½ tsp
Ghee: for cooking
π Batter should be smooth, pourable, not thick
For Potato Stuffing (Vadapav Style):
* Boiled potatoes (mashed coarse): 1Β½ cups
* Oil: 1 tbsp
* Mustard seeds: Β½ tsp
* Curry leaves: 8β10
* Green chilli (finely chopped): 1
* Ginger (grated): Β½ tsp
* Turmeric powder: ΒΌ tsp
* Salt: ΒΎ tsp
* Lemon juice: 1 tsp
* Fresh coriander (chopped): 1 tbsp
π Keep stuffing dry, not mushy
For Green Chutney:
Fresh coriander leaves: 1 cup
Mint leaves: Β½ cup
Green chilli: 1
Ginger: Β½ inch
Lemon juice: 1β2 tsp
Salt: to taste
Water: as needed for grinding
For Dry Garlic Chutney (Vada Pav Style):
* Dry coconut (grated): ΒΌ cup
* Peanuts: ΒΌ cup
* Sesame seeds: 1 tbsp
* Garlic cloves: 6β8
* Kashmiri red chilli powder: 1Β½ tbsp
* Salt: to taste
* Oil: 1 tsp
For Cheese Layer:
* Grated cheese (processed / mozzarella / cheddar): Β½ cup
How:
1οΈβ£ Spread besan chilla batter on a hot greased pan and cook until the top sets,
2οΈβ£ Make one cut on the chilla from the center to create four sections,
3οΈβ£ On the first section spread the potato stuffing evenly,
4οΈβ£ On the second section spread green chutney,
5οΈβ£ On the third section add grated cheese,
6οΈβ£ On the fourth section sprinkle dry garlic chutney,
7οΈβ£ Start folding from the potato section over the chutney, fold again over cheese, and once more to form a triangle,
8οΈβ£ Cook folded chilla on low heat until crisp and golden on both sides.
