first meal prep of the new year! this genuinely changed my life AND my health. I’ve shared many of these recipes before but this salad is one of my go-tos this time of year x Ingredients For the salad: 2½ cups cooked rice (wild or black is best here!) 2 zucchini, chopped into bite-size pieces 1 shallot, thinly sliced 1 bunch asparagus, chopped, woody ends removed 1½–2 cups cooked chicken breast, chopped or shredded Olive oil, for roasting Salt and pepper, to taste ¼–½ cup Manchego cheese, cubed 2 tbsp fresh basil, chopped 2 tbsp fresh dill, chopped For the dressing: 1 tbsp fresh dill 1 tbsp fresh basil ½ lemon, juiced Tiny pinch jalapeño (optional) 1 tbsp Dijon mustard 1 tbsp honey 4 tbsp olive oil Salt and pepper, to taste Instructions 1. Preheat the oven to 375°F. Toss the zucchini and sliced shallot with a drizzle of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20–25 minutes, until tender and lightly caramelized. Set aside. 2. Prepare the rice according to package directions and keep warm. 3. In a small blender or bowl, combine all dressing ingredients. Blend or whisk until smooth and emulsified. Taste and adjust seasoning if needed. 4. In a large bowl, combine the warm rice, roasted zucchini and shallot, raw asparagus, cooked chicken, cheese, basil, and dill. Drizzle the dressing over the salad and gently toss to combine.
