Broccoli Chickpea Nuggets 🥦🌱

Ingredients:
• Broccoli – 1 cup (roughly chopped)
• Cooked chickpeas – 1 cup
• Onion – 1 small
• Garlic – 2 cloves
• Bread slices – 2
• Chilli flakes – ½ tsp
• Chilli powder – ½ tsp
• Pepper powder – ¼ tsp
• Salt – to taste
• Oil – for brushing or frying

Method:
1. Add broccoli, cooked chickpeas, onion, and garlic to a chopper. Pulse until roughly chopped.
2. Soak bread slices in water, squeeze out excess water, and crumble them.
3. Add soaked bread, salt, chilli flakes, chilli powder, and pepper powder to the mixture.
4. Mix everything well to form a soft dough.
5. Shape the mixture into nugget shapes.
6. Brush nuggets lightly with oil and air fry at 180°C for 12–15 minutes, flipping halfway.
OR
Deep fry in hot oil until golden and crisp.

Egg Cheese Sandwich

Ingredients:
• Eggs – 2
• Onion – 2 tbsp (finely chopped)
• Capsicum – 2 tbsp (finely chopped)
• Cabbage – 2 tbsp (finely chopped)
• Pepper powder – ¼ tsp
• Salt – to taste
• Bread slices – 2
• Cheese slice – 1–2
• Ketchup – as needed
• Butter / oil – for frying

Method:
1. In a bowl, add eggs, onion, capsicum, cabbage, pepper powder, and salt. Whisk well.
2. Heat a pan with little butter or oil. Pour the egg mixture and spread evenly.
3. Place bread slices over the egg while it’s cooking and gently press.
4. Flip the egg along with bread together.
5. Brush ketchup on the bread side and place cheese slice between the breads.
6. Close the sandwich and toast both sides until golden and cheese melts.
