Canarian Dip Mojo Rojo (low calories, big flavor)



– 400 g red bell pepper
– 2 medium garlic cloves
– 12 g whole-wheat panko (or breadcrumbs)
– 20 ml extra virgin olive oil
– 10 ml Sherry vinegar/balsamic
– 2 g sweet paprika
– 1 g cumin
– ½ teaspoon pepper (coffee spoon size)
– 10 ml water
Preheat the oven to 400º F.
Wash the pepper, cut it in half and remove the seeds. Place the pepper on a baking tray with salt and a drizzle of oil.
Bake 20 minutes with top and bottom heat. Turn the pepper over and cook another 20 minutes. Set aside without removing the skin. It adds more fiber and flavor.
In a blender, add the roasted pepper, the two peeled garlic cloves, the panko, the spices, the olive oil and the Sherry vinegar. If you don’t have Sherry vinegar, you can use balsamic vinegar instead. Add a little water for a slightly lighter texture. Blend everything with a powerful blender.
Serve with a drizzle of olive oil and enjoy.
TIP: Taste and adjust to your liking. More oil to soften or a bit of hot paprika or more pepper to make it spicier.
