🐟 For the Salmon
• 6 salmon fillets (from @morrisons )
• 4 tbsp olive oil
• 2 tbsp soya sauce
• Juice of 1 lemon
• 1 tbsp crushed garlic
• 2 tsp black pepper
• 1 tsp salt
• 1 tsp crushed chilli flakes
• ½ tsp paprika powder
• Fresh or dried rosemary
• 3 tbsp butter (for frying)
🥦 Vegetables
• 1 cauliflower (cut into florets)
• 1 broccoli (cut into florets)
• 5–6 sweet potatoes (cut into chunks)
• 5-6 garlic cloves
Seasoning:
• 1tsp salt
• 1 tsp black pepper
• 3 tbsp olive oil
🥖 Garlic Bread (from @Asda )
(Optional – portion-controlled for diet meals)
👩🍳 Method
1️⃣ Marinate the Salmon
Wash and pat dry salmon fillets. Add olive oil, soya sauce, lemon juice, garlic, spices, and rosemary. Marinate for 20 minutes.
2️⃣ Roast the Vegetables
Preheat oven to 200°C.
Toss vegetables with olive oil, salt, and pepper. Roast for 30–40 minutes, flipping halfway.
3️⃣ Cook the Salmon
Heat a skillet pan on medium heat. Add butter and cook salmon for 2 minutes per side until tender and golden.
4️⃣ Serve & Enjoy
Serve salmon with roasted vegetables and garlic bread for a healthy, balanced meal.
