This is my go-to nutritious, no-added-sugar, high-protein dinner that’s easy, freezer-friendly, and perfect for meal prep or busy weeknights.

Ingredients
1 lb ground chicken (or grind your own)
28 oz San Marzano tomatoes
31 oz organic pinto beans
15.5 oz organic black beans
14.5 oz diced fire-roasted tomatoes (use regular diced for kids / less heat)
12 oz no-sugar-added tomato sauce
1 cup sweet red peppers, chopped
3 medium celery stalks
2 medium carrots
5 cloves garlic
1/2 cup hot sauce (I use Frank’s RedHot — optional for mild)
5 tbsp chili powder
2 tbsp cumin
1 tbsp paprika
1 tbsp olive oil (or extra virgin), plus 1 tbsp for cooking chicken
Salt + pepper to taste
Instructions
Add ground chicken to a large dutch oven with 1 tbsp olive oil.
Finely dice (or food process) peppers, celery, carrots, and garlic. Add to the pot.
Add San Marzano tomatoes, diced tomatoes, tomato sauce, and beans. Stir.
Add hot sauce (optional), chili powder, cumin, paprika, salt + pepper. Stir.
Simmer on low for 1 hour.
Serve with grated cheese + sour cream (optional). Enjoy!

I double (or triple!) this recipe and freeze portions. Reheat in the crockpot on low for an effortless dinner.
