Make a bright, fresh Fennel & Orange Salad that celebrates winter citrus. 🍊✨
This easy and healthy salad combines shaved fennel, juicy oranges, creamy burrata, and crunchy pistachios, finished with a simple citrus vinaigrette made with Oli Extra Virgin Olive Oil. Perfect as a light lunch, appetizer, or Mediterranean-style side dish.

Ingredients
🍊 1 burrata
🍊 2½ oranges
🍊 2 fennel fronds, chopped
🍊 1/6 red onion, thinly sliced
🍊 Oli Extra Virgin Olive Oil
🍊 Salt & pepper
🍊 A handful of pistachios, roughly chopped
🍊 Optional: fresh dill & chili flakes

Instructions
Prep
1️⃣ Shave fennel bulbs using a mandolin (or thinly slice with a sharp knife).
2️⃣ Roughly chop pistachios.
3️⃣ Peel 2 oranges and carefully segment each piece.
Make the citrus vinaigrette
4️⃣ Zest half an orange and squeeze its juice into a small bowl.
5️⃣ Add Oli Extra Virgin Olive Oil, salt, pepper, and chopped fennel fronds.
6️⃣ Whisk gently until combined.
Assemble & serve
7️⃣ Arrange shaved fennel on a large serving plate.
8️⃣ Top with orange segments, red onion, and drizzle with the vinaigrette.
9️⃣ Add burrata and finish with extra orange zest, pistachios, fresh dill, salt, pepper, chili flakes (optional), and a final drizzle of Oli Extra Virgin Olive Oil.
